Amanda Chan




1)Sensory Evaluation


Flavour (taste and smell)
-The taste of the food was just right . the soup was not too salty and had a the 'just right' taste of the chicken and the chicken stock,the right amount of condiments were used. it was very tasty and yummy!


Colour
-The colour of the chicken macaroni in soup did not have much colour because no dark soya sauce or such were needed to be put into the shoup, therefore not much colour was seen.
Texture-The texture of macaroni , chicken was just right. the macaroni was smooth and cooked , the chicken was tender after being boiled for a long time.


2)Strengths of the practical exam
-i was able to wash up and cook finish in time. everything, i felt was well managed and i was satisfied with what i cooked.


3)Weakness of the practical exam
-maybe i could find some other ways to enhance the flavour and also to make the appearance more appealing.

Sensory Evaluation:
- Flavour: (taste + smell )

The taste is a bit salty but actually is it quite nice.

The smell is quite good as i can smell all the ingredients when it is cooked.

-Colour: The colour of my dish is quite pale as i only put in a little bit of light soya sauce.

-Texture: The texture of my dish is very thick as i had put in quite a lot of cornflour. i had also put in only a little bit of water.

Strengths of Practical Exam

I manage to cook the dish within the given time and my dish also did not get burnt.

Weakness of Practical Exam

My dish was not perfect as it is too thick and there are some ingredients that i did not know and have to ask my friends.

The taste is

1. not salty

2. abit sour. The smell is,sadly, not pleasant.


b. Colour

The colour looks right, not burnt. Its colour is pale yellow.


c. Texture

It is firm and but not too firm, just nice, bouncy type of feeling. It is also quite wet. Thus, the food taste abit soggy.


STRENGTHS OF THE PRACTICAL EXAM:

Manage to cook the dish without it being burnt or overcook.

WEAKNESS OF THE PRACTICAL EXAM:

I have butterflies in my stomach, causing me to rush. When I rush, I will do wrong things without knowing it such as, taking some ingredients that is not in the list.

It taste more to pepper.It taste just right for the dish.COLOUR: brownish.


TEXTURE: the sauce was thick and the kuay teow was smooth.


STRENGTH OF PRACTICAL EXAM: i know how to pair up the perfect ingredients to make my dish a perfect delicacy on an evening dinner with family.i know what to do next without any planning.


WEAKNESS OF PRACTICAL EXAM:I don't know how to fry an egg as i'm scared of the hot oil. i don't know on which equipment to use so me and my partner end up using more equipment than what we needed and the cleaning was a hussle.

The flavour was very cheesy but it tasted nicer when it was cold.
It smelled quite nice.
Tastes best when the upper layer and bottom layer is eaten together.

The colour of the upper layer was brown and orange which looked quite nice.
The lower layer of macaroni also looked fine.

The upper layer was slightly hard which made it very chewy.
The lower layer was soft.

It is powderrish and tasty and healthy. It also smelt very appealing.

The color is nice-looking because inside got lots of melted golden cheese.

The bread tast a bit sour because I've put 2 pinches of salt on it.
The egg and tuna inside the bread taste sour and sweet as I put mayonnaise on both of them.

B) As you can see.... this bread is white..... and its sides are brown.
Texture
C) It is soft and smooth both on the inside and outside of the bread including the crust.
Strength Of my pratical examination
I have no trouble doing this pratical as I was making a sandwich.

Too salty because i added to much salt as i thought it would taste tasty and added to much salt but after eating the salty part and the aftertaste is nice. It smells good and very appetising

b.Color

The rice is brown as i added a bit of brown rice in it. But after that i added some Parmesan cheese and the color is much more nicer and the leaves on top make it look nicer as ther is brown, yellow and green.

c.Texture

The brown rice is a bit hard as it was not cook for too long but its still edible but i think that the rice should be a abit hard then its nice.

Strengths of the practical examinations

The food turns out great and the layout of the food is nice.

Weakness of the practical examinations

It was not done on time. As the brown rice was not so cook and needed a longer time to do it. But in the end it was done but not on time.

It is a plain soup with red carrot, cabbage and chicken making it colourful

A pit of plain taste with a bit of sweet and salty making it taste good

I usally cook soup at home so cooking soup is a piece of cake nothing hard to me


Weakness of Practical
The soup need atleast 45mins to cook and have the best favour but the time mdm sri give us is only 30mins.

The Pasta bolognese has a sweet taste for it has put in tomato paste,

However, it taste not like what my aunt had cook but it is still delicious.
The smell is not strong but a bit of smell from the meat.

b. Colour
The colour of it make a mixture of secondary colour and primary colour

for red and yellow is primary while the green take control of the top
making it a dish worth trying.

c. Texture
The texture is soft but not squishy and the meat has cooked to right time

making it chewy.


STRENGTHS of PRACTICAL EXAMINATION
I was able to finish the work on time and does not required to fry the spaghetti
which would take up more time

WEAKNESSES of PRACTICAL EXAMINATION
I trouble finding the right ingredient and this was not easy as it required both boiling and frying method which take up more time than i could have expected.

The taste was a bit hot as it was pataya sambal fried rice . Also , it has a mixed taste and there was mixed vegetables , eggs and chicken just like other fried rice .

I managed to make the dish in time and the taste was acceptable , rice was something I know how to fry and therefore there wasn’t any mistakes

My egg was too small and therefore could not cover the rice completely just like other pataya fried rice . The light soy sauce was a bit overdosed

The taste of the rice is good, so is the smell. The ikan bilis are tasty and not so salty due to the addition of sugar. Tomatoes are used as garnish to add on to the dish. However, the egg is a little overcooked.

b. Colour
The colour of the rice is white and the ikan bilis are golden brown. The egg is yellowish white in colour.

c. Texture
The rice is a little watery but the ikan bilis is hard. The egg is a little crispy on the edges.

STRENGTHS of PRACTICAL EXAMINATION
I am able to finish the task on time and came up with a good dish.

I am not very sure when to stop cooking the rice and require assistance.

It has coriander leaves on top of it as a garnish.

I think that i had done well in the frying of the fish and the boiling of the sauce.

I am glad that i done a healthy dish as i feel that my dish is delicious.

a. Flavour (Taste + Smell)
Too oily due to use of too much margarine. Mayonnaise and boiled eggs give off its smell. The base of the pizza is well cooked and crispy. The Filling is well cooked too.


b. Colour
Boiled Eggs give the yellow and white colouring also, the mayonnaise give the white colour line pattern. Green Bell peppers are used to give the green colouring and to make it colourful. It also differentiates and makes the Smiley face stands out.

c. Texture
After leaving for sometimes, it turns oily at its base.


STRENGTHS of PRACTICAL EXAMINATION
The practical is done on time as plan and successfully cooked the dish.


WEAKNESSES of PRACTICAL EXAMINATION
Only it didn’t turn out to be so healthy due to the use of margarine which after being leave for sometimes, it turns oily.

My pizza is golden brown in colour.

I was able to finish the coursework on time. It is a success in making the pizza. I have succeeded to follow the recipe correctly. I have also succeeded in the time management.

The rice is a bit soft and the texture of the chicken is very hard.

a. Flavour (Taste + Smell)
It tastes sweet. And it give off a smell that is quite pleasant it taste is acceptable

b. Color
It color is brownish-black.

c. Texture
The chicken is quite chewy and the sauce that was on it is quite nice too.


STRENGTHS of PRACTICAL EXAMINATION
It let us had a hand-on experiences and on the same time we can enjoy the whole process of cooking. It is not like any examination, it doesn’t restrict us to only a table and a chair. It allows us to move around to get ingredient and we may also check up on people foods as to see what they doing. We don’t have to keep quiet and do the examination. So it is quite nice to have a practical examination. Best part is, we don’t have to study for it.


WEAKNESSES of PRACTICAL EXAMINATION
The time is not enough for me,as a result,i had to speed up the process of baking it in the oven,it supposed to take 40min but i reduce the time limit to only 20min. Other thing is still acceptable.

a.Flavour (Taste + Smell)
The taste is mixed. There is the sweetness of the carrot and the egg tastes not as sweet. When the flavours are mixed together its taste is unique. I added some salt to make it a little salty to have some more flavour.

b.Colour
It was colourful.

c.Texture
It was lumpy.

STRENGTHS of PRACTICAL EXAMINATION
I finished earlier than I planned to and I had enough time to clean up after.

WEAKNESSES of PRACTICAL EXAMINATION
I was a little bit unsure of what to do at first and did not get the equipments fast.

a. Flavour (Taste + Smell)
The taste is a little too sweet and the pancake is a little too salty. It smells a little like the original pancake but has a little smell of honey.

b. Colour
Its colour is yellowish on both side with the bottom side a little more brown compared to the uppers side.

c. Texture

Its texture is a rough on both side due to the putting lesser oil. But it is to make the pancake healthier.

STRENGTHS of PRACTICAL EXAMINATION
I managed to cook the dish on time and successfully created a delicious dish. I made pancake before and thus have experience in cooking pancakes.

WEAKNESSES of PRACTICAL EXAMINATION
I made quite a mess even when I had the experience but I managed to pass up the dish on time, I added a little too much oil making the pancake look greasy and oily.
